Okay, kale chips are nothing like real chips, right? I mean, nothing compares to Cool Ranch Doritos or Flamin Hot Cheetos, and especially not kale chips!!! I’ve tried a few recipes for kale chips over the years, all promising to be the “best kale chips ever,” and I’ve always been more than disappointed. Well, this is no longer the case as I’ve found a recipe that really is quite fabulous! It comes from this great new cookbook I recently got – Plant-Powered Families: Over 100 Kid-Tested, Whole-Foods Vegan Recipes. I’ve made a handful of things so far and they have all been really good, and the kale chips were no exception. And like the title says, both Landri and Rex approved. I was actually shocked – Rex, the kid who only like packaged, processed foods and hates anything that came from the earth – was firing them down the hatch like they were M&M’s or something! Even the vegan-disapproving carnivorous husband liked them! They are super easy but just take a little bit of time so plan ahead before you’re hungy, LOL!
